These Hot Chocolate Marshmallow Cookies are so good! It’s one of my most popular items and I’ve baked a lot of them this week. Here is a great recipe for you to try from Like Mother, Like Daughter. I use 2-3 chocolate chips under the marshmallow instead of a chunk and, I toast the marshmallows in the broiler at the end of the baking cycle. You may also use a chef’s torch, if you have one.

It’s been a busy week baking for first responders. It’s great to hear that numbers continue to drop in hospitals in the Atlanta area. I love baking for others and this has been a good reminder of how taking such a small action can bring a smile to so many faces.

Thanks to my neighbor, I now have a garden box at the edge of the patio near where the grilling area will be. Easy to manage and the perfect amount of sunlight. I’m now tackling the layers to fill up the box by using the Lasagna Method. My first layer will actually be a sheet of screen (from a screen door) that will act as a sieve and a blockade for critters. Some use newspaper or cardboard as the first fill layer but I’m using wood chips. There is no right or wrong really. Do a search online and see what you have on hand for the best way to fill up your box. The patio remodel continues…..

I didn’t get to do much testing this week except for these yummy Angel Flake Biscuits.
