Peanut Butter Chunk Brownies

I’ve never really been a brownie person unless they were a little dry with ice cream on top. Many of my friends love them and I realized I didn’t have a go-to recipe. The hunt was on!

I used to be a bakery manager in Seattle on Queen Anne Hill in the mid 90s. Our recipe used one shot of espresso in the mix to make the brownies rich and a little dense. No matter what recipe I landed on, I was going to add that shot.

After trying several recipes, I chose The Best Peanut Butter Brownies Recipe by Also The Crumbs Please. I really like the consistency of the brownie and it has a nice, rich chocolate taste. The peanut butter swirl uses powdered sugar so it solidifies within the cake and isn’t runny. It tastes very much like a Buckeye. Check out this great recipe from Brown Eyed Baker for Peanut Butter Buckeyes! I love making them for the holidays!

I used a high quality vanilla extract instead of vanilla beans. I also added a teaspoon of espresso powder to the chocolate brownie mix. It really added a nice richness to the final recipe. Adding salted peanuts and small chocolate chunks on top made it a very distinctive brownie…lots of texture and taste.

The brownies are a huge hit and will be on my go-to list for summer BBQs.

    I use a really dark chocolate powder and semi-sweet chocolate chips in my go-to brownie recipe but with the addition of peanut hutter and nuts, this sounds fantastic.
