Double Chocolate Easter Cupcakes

Spring is a great time to try something new. Diving into a new flavor, or challenging decorating theme, is super satisfying. I always check in with my favorite website, Sugar Hero. I know there will be a new tasty creation by Elizabeth Labau to test my skills. 

I wanted to make a cupcake that appeared to have a carrot sticking out of the top. There was a great post for Double Chocolate Easter Cupcakes on Elizabeth’s site and I thought it would be a good combination with her rich chocolate buttercream recipe along with the Sprinkles Vanilla Buttercream recipe I love so much.

The chocolate cupcake recipe was perfect because it wasn’t super sweet. My only change was adding one tablespoon of espresso powder instead of brewed coffee. That’s a pretty big difference in strength but I feel it made the cupcakes more dense and rich. After they cooled, I cut out the centers with a paring knife. I cut in an angle to simulate the shape of the carrot. 

I grabbed my bag of Oreo Double Stuff cookies to prep the “dirt”. I bought these particular Oreos because it’s easier to separate the cookies and scrape the center. I then crushed the cookies with a food processor but you can crush them by hand and use larger pieces. 

I used Elizabeth’s recipe for the chocolate buttercream…so good! I spread the buttercream around the center then dipped the tops into the bowl of crushed cookies. I whipped up a batch of the Sprinkles Vanilla Buttercream and added food coloring to make it orange. 

I used a Wilton 1A tip in a circular motion to fill the inside of the cupcake, finishing with the carrot top. I decided not to make green frosting for leaves after seeing candies used in other recipes. I found a pack of Airheads Xtremes Sour Candy strips and cut the green sections out to use as the carrot stems.

I took these to a friend’s house for dinner and they were a big hit. The cupcake was just the right sweetness to offset the sweet buttercream frosting. They looked really beautiful in person, too. For a larger gathering, I might make this in a 9×13 dish and create a full garden.

      It’s one of the better chocolate cake batter recipes I’ve tried.
