TEST KITCHEN RECIPE
I’ve been wanting to try this cookie recipe from Sally’s Baking Addiction and thought it would be great for St. Patrick’s Day. They are fluffy and moist…perfect with home made buttercream!
They’re really good with the almond extract recommended in the recipe but I used leftover Baileys Almande Almondmilk Liqueur I had in the refrigerator. They taste amazing but switching out that one ingredient probably didn’t allow the cookies to rise as high as Sally’s. Don’t be afraid to switch out flavors and try new combinations. The amount of extract used in a cookie is small and won’t affect the recipe in a big way.
Cookies will be fluffy when removed from the oven.

Instead of using my go-to Sprinkles Cupcake buttercream frosting, I used Sally’s Favorite Vanilla Buttercream. It was really smooth and creamy. I found it easier to make to get that silky texture. The pinch of salt really balances out the sweetness! It spreads easily onto the cookie, too. Something that creamy makes it much easier to spread beautifully with a small icing spatula and cuts down on decorating time.
